The secret to enjoying a quality bottle of wine is:
1.
Open the bottle and allow it to breathe, and,
2.
If it does not look as though it's breathing, give it mouth to mouth.................. no, just kidding!! Putting it in a Riedel or a Spiegelau is probably a better idea.

Amisfield Pinot Noir 2007 - a great vintage
2007 was the vintage of the decade for Central Otago. Amisfield is certainly one of the top producers and have been lauded everywhere for this vintage, viz

Valli Vineyards Tasting on Wednesday,

Grant Taylor is one of NZ's best winemakers and is owner of Valli Vineyards from Central Otago. We are holding a Valli tasting and matching the wines to the food of Nik Mavromatis of Mediterranean Foods. The Valli wines are fantastic, such as the 2007 Bannockburn Pinot Noir pictured at right - it's perfumed, has ripe plum fruit and mocha and toffee notes. It's also rich ripe with dense fruit, up front power layered with complex spice from barrels and the use of whole bunches - you can taste it with his other wines by coming to the tasting.

Trinity Hill Gimblett Gravels Tempranillo 2006
Trophy winning wine that typifies a very small but high quality crop in 2006. This wine has wild raspberry and fruit cake spice on the nose. On the palate it is silky but has good weight with elegance and complexity no doubt helped by 7% Malbec and just 3% Syrah that provides the spice. The wine also draws a hint of vanilla from the oak barrels and it has excellent structure with good length. Cellar or drink now.
